Haladi milled after a slow sun dry. The colour is deep marigold and the smell is peppery, closer to the rhizome than to a bulk tin. Stir it into dal, ghee, or warm milk.

How it is made
Rhizomes are boiled, dried on raised mats, and ground in a stone mill by the Kandhamal cluster.
